nobody's going to mention that you have to be a skilled horseman to do this? That horse isn't walking, trotting or loping...it's running. I'm impressed even if you didn't have the steadicam!

I'm going to be documenting a 400 mile horseback ride on a DSLR and I'm looking for the best stabilizing option while on a horse.

Does anyone have a rig or suggestions for building one (preferably attached to the horse)?

If anybody has ever crossed paths with Michael Landon Jr, he has a total train-wreck of a steadicam/horse/hard mount story. It'll change your mind about ever considering this. I commend your horsemanship and skill, but I would never attempt this myself.
